How you will use this
SALAD DRESSINGS
The flagship use. Lemon, olive oil, salt, pepper. The quality of the oil determines the quality of the dressing.
FINISHING DRIZZLE
On soups, roasted vegetables, fresh bread, hummus. The fruity notes show only when the oil isn't heated.
MEDIUM-HEAT COOKING
Smoke point around 190°C. Fine for sautéing and roasting; avoid deep-frying (use coconut or avocado oil instead).
MEDITERRANEAN BAKING
Replaces butter in olive oil cakes, focaccia, and savoury baking where you want the green-fruity flavour.

Substitute with
Use in place of seed oils (canola, sunflower) wherever a neutral oil isn't critical. The flavour adds value to most savoury dishes.
Pairs with

Storage tips
Cool, dark place (away from the stove). Olive oil oxidises quickly when exposed to light and heat. The dark bottle helps; finish within 6 months of opening for peak flavour.
Source and milling
Cold-pressed from organically-grown olives. Cold pressing means the oil is mechanically extracted without heat, preserving the polyphenols and aromatic compounds that give extra virgin its character.
