Source and milling

Hand-harvested from the tidal clay ponds of Guérande, Brittany, by salt farmers (paludiers) using traditional wooden tools. The grey colour comes from the natural clay residue, which is also where the trace minerals concentrate.

The story behind the bag

Celtic salt has been harvested in Guérande for over a thousand years. The process is slow: seawater is allowed to evaporate in shallow clay ponds across the summer; salt crystals are then raked off the surface (the white fleur de sel) or scraped from the bottom (the grey sel gris). This is the fine-ground sel gris, ideal for the salt shaker on the kitchen table.
