SALT-CRUSTED BAKING
Coarse crystals work for salt-baked fish, salt-crusted potatoes, and traditional baked salt-cured methods.
SOLE WATER
Saturated salt water (sole) made by dissolving himalayan in spring water; a daily mineral drink in some traditions.

Substitute with
Coarse crystals need a grinder or pestle. Roughly 30% less salt by volume than ground table salt; use slightly more if cooking from a recipe written for fine salt.
Pairs with
Roasted meats, eggs, fresh bread, salted chocolate, brining liquids. The slight mineral sweetness of himalayan works particularly well with sweet desserts that need a salt counterpoint.
Storage tips
Cool, dry, sealed container. Pink himalayan is more humidity-resistant than celtic salt because of the lower clay content.
Source and milling
Mined from the Khewra Salt Mine in Pakistan, formed from ancient sea deposits compressed under the Himalayan mountains over millions of years. The pink colour comes from naturally-occurring iron oxide and 84 trace minerals.
